Cream of Mushroom Soup (Use this also as a delicious sauce)

Ingredient Carbs
250 grams mushrooms 5 carbs
1⁄2 onion = 40 grams 3.5 carbs
80 grams butter 0 carbs
1⁄2 chicken stock cube in 1.5 cups of boiling water 0.35 carbs
1 cup/250 ml of double cream 4 carbs
salt and pepper to taste 0
1⁄2 teaspoon oregano 0
1⁄4 teaspoon xantham gum (thickener) 0
Total Carbs 12.85 grams
6 servings = 2.14 grams of carbohydrate per serving
so knock yourself out with this one. It’s beautiful too! You can, of course, take a much larger serving if you wish.
Instructions
Sauté the mushrooms, broth, onion and oregano in a large pot until soft
- about 5 minutes at high temperature.
Then add butter, salt, pepper, heavy cream and lastly the xantham gum.
Then bring this to the boil. Allow to cool and store in refrigerator.
Note: This can easily become a chicken soup recipe. Just replace the mushrooms with chicken and voila!
Lower Fat Tip – Try replacing butter with margarine and reducing the cup of double cream to half a cup. It will turn out a little thinner but still delicious.
