You’ll need a low-carb tortilla to use as the base. Either use salsa, pizza sauce or a low-carb ketchup for the tomato sauce. Again, the brand of low-carb tortilla I use is Mama Lupe’s – great taste and only 3 grams of net carbohydrate per tortilla.

<p>Lay out your tortilla and spread on your sauce. If using salsa or pizza sauce, this may add another 1 or 2 grams of carbohydrate (which still makes for a very low-carb pizza). The amount of sauce you use is up to you; you can even go without it if you wish. Next sprinkle your grated cheese on top. Add any amount of chicken you wish and shake some paprika to coat it. Now add your pepperoni.</p>
<p>If you like also sprinkle a little basil on top.

<p>Mushrooms are also a great choice for a low-carb pizza topping. If you don’t want to purchase low carb tortillas (you should, they’re a life-saver!) you can always have a crustless pizza. Simply set your non-stick skillet over a medium heat and throw on your mozzarella forming a circle.</p>
<p>Wait until the cheese starts bubbling and add the toppings of your choice i.e. pepperoni, chicken, mushrooms, peppers, ham – whatever you like (no sauce this time). When the edge of your cheese turns brown, it’s time to take off the heat. You’ll be amazed that the cheese actually turns hard and crispy at the base. You can actually cut this into slices and hold in your hand without it flopping all over the place. What’s best is that it is almost carb-free.</p>
<p><strong>Lower-Fat Tip</strong> – You could always use less cheese and/or drop the pepperoni.</p>

<p>Makes 2-3 small-medium pancakes. Don’t leave on heat for too long as you want these to stay moist. Use a low-medium heat.<br />
When done, melt butter/margarine on top, pour on some cream or sugar-free syrup. Remember that you can also make these in vanilla or cinnamon flavor by adding these flavorings to the mixture.<br />
(Please be aware that these will not taste very good if made with Whey Protein powder. They will lack flavor and tend to be very dry.)</p>
<p>Lower-Fat Tip – Use a calorie-free syrup instead of butter as a topping. Also, these taste great even without the double cream as an ingredient.</p>

<p>so knock yourself out with this one. It’s beautiful too! You can, of course, take a much larger serving if you wish.</p>
<p><strong>Instructions </strong><br />
Sauté the mushrooms, broth, onion and oregano in a large pot until soft<br />
- about 5 minutes at high temperature.</p>
<p>Then add butter, salt, pepper, heavy cream and lastly the xantham gum.</p>
<p>Then bring this to the boil. Allow to cool and store in refrigerator.</p>
<p>Note: This can easily become a chicken soup recipe. Just replace the mushrooms with chicken and voila!</p>
<p>Lower Fat Tip – Try replacing butter with margarine and reducing the cup of double cream to half a cup. It will turn out a little thinner but still delicious.</p>
